The HK-Redline JDR450B is a table-top dough sheeter, the machine that rolls dough to an even thickness far faster and more consistently than a rolling pin. It is used for pastry, croissants, puff, pizza bases and pasta sheets in bakeries, hotels and patisseries.

Dough passes between a pair of rollers 522 mm wide and 88 mm in diameter, with the gap adjusted to set thickness. The 522 mm width is the working figure: it determines how wide a sheet can be produced in one pass, and therefore how large a pastry block can be laminated without folding it down first.

Despite the table-top description it is a substantial machine at 1770 × 820 × 620 mm and 117 kg, so it needs a bench built to take it. The motor draws only 0.56 kW, since sheeting is a low-load operation compared with mixing.
