The HK-Redline MDXZ-24 is a floor-standing electric pressure fryer with a 24 litre pot, the largest in this range and a production machine rather than a counter appliance. It is built for chicken shops, hotels and quick-service kitchens frying continuously through a shift.

Pressure frying works on low temperature and high pressure: the sealed lid raises the boiling point inside the pot, so food cooks faster and holds its moisture, coming out crisp on the outside and tender within, with better colour than open frying gives. Temperature control and pressure release are automatic, so the operator is not managing the seal by hand.

The body is stainless steel. It draws 13.5 kW on a 380 V 50 Hz three-phase supply, so three-phase must be available at the installation point, and at 111 kg and 460 × 960 × 1230 mm it is a fixed installation.
