Static cooling is the point of it: the well holds -15 to -18 °C with no fan blowing across the product, so gelato keeps its texture instead of drying and skinning over. Hot-gas defrost runs automatically, and a digital controller on the front sets and displays the well temperature.
The cabinet is lacquered in a choice of 18 standard RAL shades, with an AISI 304 display plane and a white compac quartz worktop. Rated to climatic class 7, it covers Kenyan ambient conditions comfortably; allow about 1.4 m clearance for the glass to tilt open.
