The HK-Redline FX-14 is an electric dough proofer holding 14 trays, the cabinet that gives bread and pastry a controlled warm, humid environment to rise in rather than leaving it to the ambient kitchen.

Controlled proving is what makes output consistent. Left on a bench, dough proves at whatever the kitchen happens to be that day, so timings drift and the same recipe gives a different loaf morning and afternoon. A proofer removes that variable, which matters most in a kitchen where the temperature swings.

It takes 14 trays of 400 × 600 mm, the standard bakery size, and draws 2.4 kW on a 220-230 V supply. The cabinet is 1920 mm tall on a 500 × 760 mm footprint and weighs 50 kg. Trays are not supplied, so order them with the proofer.
