A 240 W motor on an ordinary single-phase 220 V supply drives the blade, and the carriage runs against a stainless steel base so the stroke stays smooth through a long batch. At 470 × 420 × 390 mm it sits on a standard prep counter rather than occupying a whole section of it.
Slicing by machine is what makes consistent portioning possible: every slice comes off at the same thickness regardless of who is on shift, which controls plate cost and presentation in a way hand carving cannot.
